Amazing Almond Cake

This is a yummy cake that can be made for a last minute party or as a quick dessert. Hailey thought it would also be good to serve for brunch or something similar. It is SUPER fast and turns out perfectly every time. People will be impressed, just don't let them know how easy it is to make! :)

Almond Cake

1 stick (1/2 cup) butter (not margarine)
2 eggs, beaten
1 cup flour
1 cup sugar
1 tsp. almond extract (I'm generous with this)
sliced almonds

Melt butter, not margarine, in a glass mixing bowl in the microwave. Add all other ingredients to that, mixing with a spoon. Pour into a lightly greased (with Pam) pie plate. Spread evenly and sprinkle with sliced almonds on top. Bake at 350 for 1/2 hour or until light brown and rounded. Cool and/or refrigerate, and cut into tiny wedges.

  1. I was having friends over for "gouté," a mid-afternoon snack. I thought I'd try this and everyone loved it. Thanks for sharing it!

  2. (I looked up the correct spelling: it's goûter... just in case any French experts out there were wondering)

  3. This is a very nice buttery-almond cake! Thanks for posting. (What happened to Becki-Becki-Bo-Becki? Is a cormorant a bird?)

  4. Yes, a cormorant is a bird. One of my favorites, actually. I switched from B-B-Bo-B just because we decided to use pseudonyms for safety. All of us have waterbird pseudonyms. It's fun. Sorry for the confusion if there was any.

And I'm glad the cake worked!
